INGREDIENTS
WET
- 3 spotted soft bananas
- 1 flax egg (1 TB flax + 3TB water) or 1 egg
- 1/4 cup maple syrup or (1 cup applesauce)
- 1/2 cup almond or nut butter
- 1/4 coconut sugar (or granulated)
- 1t vanilla extract
- 1/4 cup granola (as topping)
DRY
- 1 1/2 cups oat flour (or almond flour)
- 1/4 cup Rookie Vanilla Protein
- 3 t baking powder
- 1 cup chocolate chips
INSTRUCTIONS
- Preheat oven to 400 degrees F.
- Make your flax egg by mixing the ground flax and water and putting in the refrigerator to chill for 10-30 minutes. (You can also skip this step if you're using a real egg).
- In a large bowl, mix together all of your wet ingredients (including the egg).
- Add dry ingredients (except chocolate chips) and mix until just combined.
- Fold in chocolate chips.
- Add batter to lined or sprayed muffin tin (about 1/4 cup, or use a cookie scoop).
- Bake muffins for 5 minutes at 400 degrees, reducing heat to 350 and baking for another 15-20 minutes.
- Let muffins cool, and then serve!
